# How To Make It:

03 - In a small bowl, whisk together olive oil, fresh lemon juice, red wine vinegar, ground sumac, minced garlic, salt, and black pepper until emulsified.
04 - Just before serving, add cooled pita chips to the salad. Drizzle dressing over the mixture and toss gently to combine.
05 - Taste the salad and adjust seasoning as needed. Serve immediately to maintain crunchiness.

# Expert Advice:

01 -
  • It comes together in 30 minutes but tastes like you spent all day on it.
  • The crispy pita chips stay golden and crunchy right until the last bite if you time it right.
  • Sumac gives you that tangy complexity without any citrus overtone.
  • It's naturally vegan and makes people feel like they're eating something special, even though it's just vegetables.
02 -
  • Add the pita chips right before serving or they'll turn into sad, soggy bread bits by the time you eat; they're the whole point of the crunch.
  • If your sumac tastes bitter or musty, replace it—old sumac loses its brightness and will ruin the whole salad's balance.
03 -
  • Rub a raw garlic clove on the warm pita chips right as they come out of the oven—the flavor will infuse into them as they cool.
  • Make the dressing first and let it sit while you prep the vegetables so the flavors get to know each other.
