Char the vegetables:
Preheat your broiler and spread the tomatillos, peppers, onion quarters, and unpeeled garlic on a baking sheet. Broil for 8 to 10 minutes, turning everything halfway through, until vegetables are blistered and blackened in spots. Let them cool slightly then peel the garlic and remove stems and seeds from the peppers.
Blend the sauce:
Combine all those charred vegetables, cilantro, broth, cumin, oregano, and lime juice in a blender. Puree until completely smooth, which might take a minute, and resist the urge to add more liquid, the sauce should be thick and vibrant green.
Sear the chicken:
Season the chicken generously with salt and pepper. Heat oil in a Dutch oven over medium high heat and add chicken pieces. Sear for 3 to 4 minutes per side until golden brown, then remove and set aside on a plate.
Simmer everything together:
Pour that beautiful green sauce into the pot, scraping up all the browned bits from the bottom. Bring to a gentle simmer then nestle the chicken back into the sauce. Cover and cook for 45 to 50 minutes until the chicken is fork tender.
Shred and finish:
Lift out the chicken and shred with two forks right in the pot or on a cutting board. Return the shreds to the sauce and stir everything together. Simmer uncovered for 5 more minutes to thicken slightly.

How To Make It

Step 01

Char the Vegetables: Preheat broiler to high. Arrange tomatillos, poblano peppers, jalapeños, onion, and unpeeled garlic cloves on a baking sheet. Broil for 8–10 minutes, turning as needed, until vegetables are charred and softened. Let cool slightly, then peel garlic and remove stems and seeds from peppers.

Prepare the Sauce: Transfer broiled vegetables, peeled garlic, cilantro, chicken broth, cumin, oregano, and lime juice to a blender. Blend until completely smooth.

Step 03

Sear the Chicken: Season chicken thoroughly with salt and pepper. In a large Dutch oven or heavy pot, heat oil over medium-high heat. Add chicken and sear until lightly browned, about 3–4 minutes per side. Remove chicken and set aside.

Step 04

Simmer with Sauce: Reduce heat to medium. Add the blended green sauce to the pot, scraping up any browned bits from the bottom. Bring to a gentle simmer.

Step 05

Braise the Chicken: Return chicken to the pot, nestling it into the sauce. Cover and simmer gently for 45–50 minutes, until the chicken is tender and cooked through.

Step 06

Shred and Combine: Remove chicken from the pot and shred using two forks. Return shredded chicken to the sauce and stir to combine. Simmer uncovered for another 5 minutes to allow the sauce to thicken slightly.

Step 07

Serve: Serve hot, garnished with fresh cilantro, avocado, radishes, and lime wedges.
