# What You'll Need:

→ Chia Pudding Base

01 - 2 cups plain Greek yogurt
02 - 1 cup milk, dairy or plant-based
03 - 1/4 cup chia seeds
04 - 2 tablespoons honey or maple syrup
05 - 1 teaspoon pure vanilla extract

→ Strawberry Layer

06 - 2 cups fresh strawberries, hulled and sliced
07 - 1 tablespoon fresh lemon juice
08 - 1 to 2 tablespoons honey or maple syrup, to taste

→ Topping

09 - 1 ounce dark chocolate, 70% cocoa or higher, shaved
10 - Fresh strawberries for garnish, optional
11 - Fresh mint leaves for garnish, optional

# How To Make It:

01 - In a mixing bowl, whisk together Greek yogurt, milk, chia seeds, honey or maple syrup, and vanilla extract until well combined.
02 - Cover and refrigerate for at least 4 hours or overnight, stirring once after the first hour to prevent clumping.
03 - In a separate bowl, toss sliced strawberries with lemon juice and honey or maple syrup. Let sit for 10 minutes to macerate and release juices.
04 - Once the chia pudding has thickened, spoon half into serving glasses or jars.
05 - Layer with half of the macerated strawberries. Repeat with remaining pudding and strawberries.
06 - Sprinkle with dark chocolate shavings and garnish with extra strawberries or mint if desired.
07 - Serve immediately, or chill until ready to enjoy.

# Expert Advice:

01 -
  • It actually tastes indulgent while being genuinely good for your body, so you don't have to negotiate with yourself about breakfast.
  • Everything comes together while you sleep or go about your day, which means zero morning stress.
  • The texture is so satisfying—creamy, slightly chewy, a little crunch from those tiny seeds—that you'll find yourself eating slowly instead of rushing.
02 -
  • Don't skip the lemon juice on the strawberries—it's the difference between them tasting like they're supposed to and tasting vaguely dull, and I learned this the hard way by making them without it once.
  • The pudding will seem too thin when you first mix it; trust the process because those chia seeds expand as they sit and transform everything into something almost spoonable, which is the whole magic.
03 -
  • The quality of your dark chocolate matters way more than you'd think because it's doing real work here as the flavor anchor, so splurge on something you actually like eating.
  • If your pudding seems too thick after sitting, stir in a splash more milk—it won't hurt anything and gives you exactly the texture you want.
