01 - 8 medium flour tortillas
02 - 1.5 cups canned black or pinto beans, drained and rinsed
03 - 2 cups shredded cheddar, Monterey Jack, or blended cheese
04 - 2 tablespoons butter or neutral oil

05 - Salsa
06 - Sour cream
07 - Sliced avocado or guacamole
08 - Chopped cilantro
# How To Make It:
01 - Lightly mash the drained beans with a fork to ease spreading.
02 - Warm a large skillet over medium heat and add butter or oil.
03 - Place a tortilla in the skillet and sprinkle 1/4 cup shredded cheese over half of it, then add about 3 tablespoons of mashed beans atop the cheese.
04 - Fold the tortilla in half, covering the filling completely.
05 - Cook for 2 to 3 minutes on each side, pressing gently with a spatula, until the tortilla is golden brown and the cheese has melted.
06 - Remove the cooked quesadilla and repeat steps with the remaining tortillas, beans, and cheese.
07 - Slice each quesadilla into wedges and serve warm with preferred toppings.
